White Chicken Chili Recipe

Here's the chili recipe I made for our chili potluck Saturday. I meant to post it yesterday, but didn't get around to it. Very easy and tastes delicious. This is a recipe we got from Greg's mom that I believe she got from the chili cook-off in Lansing one year. You can adjust the jalapenos and chili powder to your liking of a little spicy or a lot spicy! Enjoy!

White Chicken Chili


Ingredients:
  • 45 oz. Michigan white beans, soaked or Great Northern Beans
  • 2 cups cubed cooked chicken (I use a little more)
  • 1 cup water
  • 1 medium onion, chopped
  • 1 green and 1 red pepper, chopped
  • 2-4 fresh jalapeno peppers, chopped or one 4oz. can green chili peppers
  • 2 tsp. instant chicken bouillon granules
  • 1 tsp. chili powder (I add a little more- we like it spicy)
  • Shredded Monterey Jack cheese
Directions:
  1. Combine all ingredients except cheese in Crockpot and slow cook for 3-4 hours at medium high, then low for the last half hour.
  2. Sprinkle with cheese before serving.
