White Chicken Chili
Ingredients:
- 45 oz. Michigan white beans, soaked or Great Northern Beans
- 2 cups cubed cooked chicken (I use a little more)
- 1 cup water
- 1 medium onion, chopped
- 1 green and 1 red pepper, chopped
- 2-4 fresh jalapeno peppers, chopped or one 4oz. can green chili peppers
- 2 tsp. instant chicken bouillon granules
- 1 tsp. chili powder (I add a little more- we like it spicy)
- Shredded Monterey Jack cheese
- Combine all ingredients except cheese in Crockpot and slow cook for 3-4 hours at medium high, then low for the last half hour.
- Sprinkle with cheese before serving.
